Lemon Ginger Green Smoothie

 

Happy New Year!!!!!   Lemon Ginger Green Smoothie anyone???  After the holiday season, our bellies need a break and this smoothie was much appreciated this morning.  It’s the season of clean starts and fresh resolutions and we’re not breaking any new ground here, but we love it!

 

This month we will be taking a bit of a break from the indulgent recipes we have been posting lately, and we are so excited about what we’ve got planned for the upcoming year!  Our projects include:

 

  • Turning Nicole’s junk room (read: empty bedroom) into a creative space/office
  • Renovating Katherine’s basement
  • More travel posts from the island and a trip to Italy (eek! so excited)
  • And….A HEALTHY & MODERN NEWFOUNDLAND CLASSICS E-COOKBOOK!!!!!

 

So stay tuned this year for some deadly content 🙂  Subscribe to our mailing list so you don’t miss a thing!  Facebook has some new algorithm that isn’t friendly to pages for businesses.  People just won’t see it if it’s not shared or liked a bunch.  Videos get placed higher up on a person’s newsfeed, so we may delve into that area this year as well!

 

Now, onto that smoothie.   This guy is great for upset tummies after a bit too much holiday cheer (guilty).   I find the average lemon-ginger green smoothie to be too strong for me and it can’t be too good for my belly if it actually turns my stomach to try and eat it!    So, I tempered the strong flavour of the lemon and ginger with some banana, yogurt, avocado and coconut milk…and just a wee bit of maple syrup!   I also used spinach instead of kale for the greens because I didn’t want the added bitterness that kale would bring.

 

Try it out and play with the proportions to best suit your own tastes!   That’s what’s so great about a smoothie is you can just add more stuff until it tastes good 🙂

Lemon Ginger Green Smoothie

This healthy tummy-soothing smoothie serves 1 - but is easily adjustable to serve 2 or more.  

Ingredients

  • 1/4 cup frozen spinach
  • 1/4 cup frozen avocado chunks
  • 1/2 banana
  • 1 inch chunk ginger root, peeled
  • 1/2 lemon, juiced
  • 2 tbsp plain yogurt (I used Icelandic skyr)
  • 200 ml coconut milk
  • 1 tsp maple syrup, to taste

Instructions

  1. Add all ingredients to a blender and blend until smooth.   Add more coconut milk or a bit of water to thin if needed.  Adjust to taste as you like!
