Pickled Beets, Marmalade, and Smoked Cheddar Panini

  • 2 slices hearty multigrain bread
  • 1-2 tsp mayonnaise
  • 1-2 tsp marmalade
  • sliced pickled beets
  • 2-3 tbsp shredded smoked cheddar cheese
  • shallot, sliced thinly
  • handful spinach leaves


  1. Spread one slice of bread with mayo and one with marmalade.  Layer the mayo side with the beets, a few slices of shallot, smoked cheddar and spinach.  Top with the other slice of bread and grill for several minutes in a panini press.  If you don't have a panini press, place in a dry pan with a weighted plate on top to press the sandwich down, flip once browned and repeat with other side.
