A warming bowl of oatmeal that is subtly sweet, tangy and a little bit nutty.
Bring 4 1/2 cups water to a boil on stove top. Once boiling, add oatmeal and salt. Stir and let simmer, uncovered for 20-25 minutes, stirring more frequently near the end. Remove from heat and stir in vanilla extract.
Add Oatmeal, 3 cups water and salt to the pot, stir, cover and lock the top in place. Make sure venting is pointing to sealing. Press the manual button and time for 10 minutes. Once finished, do a quick pressure release, as per instruction manual. Stir in the vanilla extract.
Heat the butter and oil in a pan over medium heat. Add the apples and cinnamon and fry for 5-10 minutes until soft. Add the brown sugar to the pan near the end and stir until sugar is dissolved. Remove from heat.
Top your bowl of oatmeal with the apples, kefir and walnuts. Keep apples separate from oatmeal when storing in the fridge for best results. Enjoy!
