Cucumber, Pineapple & Celery Gin Cooler

A refreshing vegetal drink that's perfect as an aperitif before dinner, or enjoyed on the patio on a hot summer day.

Servings 1 drink


  • 2 oz pineapple juice, not from concentrate
  • 1 oz gin
  • 5 slices cucumber
  • 2 dashes celery bitters (we used Scrappy's)
  • 1/4 oz triple sec
  • pinch of salt
  • sparkling water, to top


  1. Add your cucumber slices and a pinch of salt to the bottom of a cocktail shaker. Muddle the cucumber and salt together, until the cucumber breaks down and releases it's liquid. Add the remaining ingredients to the shaker, fill with ice, add the top of the shaker and shake vigorously for 10 seconds.  Strain into a high ball glass filled with ice and top with sparkling water. Enjoy!
