Apple, Red Onion & Balsamic Cheddar Melt


  • 1-2 tbsp red onion, thinly sliced
  • 1/2 apple, thinly sliced
  • 2-3 oz old cheddar cheese, shredded
  • 1 tbsp balsamic vinegar
  • 1 tbsp mayonnaise
  • 2 tbsp salted butter
  • 2 slices crusty/hearty bread


  1. Combine mayonnaise and balsamic vinegar in a small bowl and stir.   

  2. Spread both slices of the bread with balsamic mayo mix.   Layer one slice with cheddar, onion, apple, and more cheddar.   Top with the second slice.

  3. Heat butter in a cast iron skillet over medium heat.   Place the sandwich in the skillet and fry on both sides for several minutes until browned and cheese is melted.
