Cucumber, Pineapple & Celery Gin Cooler

A refreshing vegetal drink that’s perfect as an aperitif before dinner, or enjoyed on the patio on a hot summer day.

Ingredients
  

  • 2 oz pineapple juice not from concentrate
  • 1 oz gin
  • 5 slices cucumber
  • 2 dashes celery bitters we used Scrappy’s
  • 1/4 oz triple sec
  • pinch of salt
  • sparkling water to top

Instructions
 

  • Add your cucumber slices and a pinch of salt to the bottom of a cocktail shaker.
  • Muddle the cucumber and salt together, until the cucumber breaks down and releases it’s liquid.
  • Add the remaining ingredients to the shaker, fill with ice, add the top of the shaker and shake vigorously for 10 seconds.
  • Strain into a high ball glass filled with ice and top with sparkling water. Enjoy!
