Savor the unique blend of tangy pickled beets, sweet marmalade, and smoky cheddar in this hearty multigrain panini.

- 2 slices hearty multigrain bread
- 1-2 tsp mayonnaise
- 1-2 tsp marmalade
- sliced pickled beets
- 2-3 tbsp shredded smoked cheddar cheese
- shallot sliced thinly
- handful spinach leaves
Spread one slice of bread with mayo and one with marmalade. Layer the mayo side with the beets, a few slices of shallot, smoked cheddar and spinach.
Top with the other slice of bread and grill for several minutes in a panini press. If you don't have a panini press, place in a dry pan with a weighted plate on top to press the sandwich down, flip once browned and repeat with other side.
