If you’re hitting a mid-week slump in the cooking department, we’ve got a SUPER easy sandwich for you today. A pickled beet, marmalade and smoked cheddar panini. I hope the fact this sandwich has marmalade in it didn’t just scare people away. This is honestly the best sandwich I’ve had in a while. Don’t get me wrong, I like sandwiches, but they’ve gotta have a bit of oomph. They’ve gotta be a little out of the ordinary, and this one certainly delivers in that area.
The flavours all go so well together. You’ve got the pickled beets, which let’s be honest, are in most homes in Newfoundland. Then we’ve got the marmalade. And we all know how well oranges and beets go together, we’ve even made a salad with the two of them already. Next up is the smoked cheddar, a natural apple-wood smoked cheddar to be exact (UM YUM). And finally, we topped it with some spinach and stuffed it between two slices of a hearty multigrain loaf. Throw that bad boy on the grill and you’ve got a winner dinner (or lunch).
Even our sister Laura, a non-beet fan thought they were good. So there’s that. In all seriousness, give it a go, and if you don’t like it, let us know we’ve got weird taste buds.
Pickled Beets, Marmalade, and Smoked Cheddar Panini
Ingredients
- 2 slices hearty multigrain bread
- 1-2 tsp mayonnaise
- 1-2 tsp marmalade
- sliced pickled beets
- 2-3 tbsp shredded smoked cheddar cheese
- shallot sliced thinly
- handful spinach leaves
Instructions
- Spread one slice of bread with mayo and one with marmalade. Layer the mayo side with the beets, a few slices of shallot, smoked cheddar and spinach.
- Top with the other slice of bread and grill for several minutes in a panini press. If you don't have a panini press, place in a dry pan with a weighted plate on top to press the sandwich down, flip once browned and repeat with other side.
