Green Eggnog Smoothie Bowl

Hey guys! It’s less than a month before Christmas!!!  Time for festive everything, including this eggnog smoothie bowl!!

So…I had never actually tried a smoothie bowl before today because, well I am not a huge fan of smoothies (blasphemy I know).  It just seemed like lot of effort for something I don’t really love to be honest.

Well, it’s hard for me to admit, but I couldn’t have been more wrong. I think the addition of nuts and fruit breaks up the thick mouth-coating texture of the smoothie.  It somehow makes eating liquid spinach on an empty stomach palatable!!  Plus it took all of 5 minutes to make, so I grossly overestimated the effort involved.

This green eggnog smoothie bowl is super #instaworthy and tastes super good, plus it’s actually healthy!!! 😍  I’m a smoothie bowl convert.

Ps. I used light eggnog but regular would taste just fine if you can’t find light.  Make this vegan by using coconut yogurt and almond nog…bet it would be delicious.

Green Eggnog Smoothie Bowl

Ingredients
  

  • 2 Tbsp Rolled oats
  • 1 Tbsp Raw hulled pistachios
  • 1/4 Cup Frozen spinach
  • 1 Peeled banana
  • 1/2 Cup Plain greek or skyr yogurt
  • 1/2 Cup Light eggnog
  • 1 Pinch Cinnamon and nutmeg
  • 1 Tbsp Raw hulled pistachios For garnish
  • 1/4 Cup Pomegranate arils For garnish
  • 1 Tbsp Flax and/or chia seeds For garnish

Instructions
 

  • Add banana, oats, yogurt, half the pistachios, eggnog, spices and ice to a blender.
  • Blend until smooth, roughly 1 minute. Pour into a bowl and top with the remaining ingredients or other toppings of your choice. Enjoy immediately.
