Let’s keep our spirits up as we wait for spring to arrive with this Italian Grilled Cheese with Sun-Dried Tomato Butter. It couldn’t be easier to make, and is perfect for a busy work week. Because honestly, there’s no need to sacrifice flavour when you need something simple and fast. That’s why we packed this Italian grilled cheese with some super flavourful oil marinated sun-dried tomatoes and fragrant fresh basil.

We didn’t want to just throw sun-dried tomatoes in the sandwich, because that could easily overpower the other flavours and would add an undesirable chewy texture. So, we blended them up with some softened butter to spread over the bread. It worked out so well! It gives a rich umami taste to the sandwich, which pairs well with the mellow creaminess of fresh mozzarella and the aromatic basil. It’s kind of like a riff off a caprese salad. The only thing we care about though? That it tastes really good and took about 10 minutes to make. Enough said.

Italian Grilled Cheese with Sun-Dried Tomato Butter

A unique take on the classic grilled cheese, using fresh basil, fresh mozzarella and an unami-filled sun-dried tomato butter crust.

Ingredients
  

  • 1/4 cup salted butter softened
  • 1 heaping tbsp sun-dried tomatoes packed in oil
  • 200 grams fresh mozzarella sliced
  • 8 slices rustic Italian white bread
  • 1 bunch fresh basil leaves

Instructions
 

  • Slice the mozzarella and place on a paper towel to drain while you make the butter.  Place the softened butter and sun-dried tomatoes in a food processor or blender, and blitz until well combined.
  • Heat a large frying pan over medium-low heat.  For each sandwich, spread 1 tbsp of sun-dried tomato butter over the outside of two slices of bread. With the butter side facing down, add a layer of basil and a quarter of the mozzarella (50g), then top with the second slice of bread.  Grill in the pan for several minutes on each side, until the bread is toasted and cheese is melted.  Enjoy!
