Rosemary Garlic and Maple Miso Roasted Cashews Cheeseboard

Well, it’s almost time to say goodbye to 2017 and hello to 2018.  But before we head into January, where healthy eating is on everyone’s mind, we are sharing a delicious cheeseboard.  We’ve got 2 local cheeses by the Five Brother’s Artisan Cheese, a delicious goats cheese and an excellent blue cheese (or so katherine says, I’m not a blue cheese fan).  Then we’ve got our easy roasted cashews in two flavours.

 

 

Do any of you have goals for the new year?  I have a feeling 2018 will be great.  Katherine and I definitely have some learning to do with running a blog, but it’s all for fun and we are honestly enjoying being creative in the kitchen.  Before we started this, I often found myself in a bit of a rut with cooking.  Most definitely not everything comes out blog-worthy, but it’s fun to try, and learn from our mistakes.

 

 

So back to our recipe of the day.  We’ve got some sweet and savoury cashews for you to add to your New Years Eve cheeseboard.  Some rosemary garlic flavoured ones that taste excellent with the mild Five Brothers’ Smoked Cheddar.  And some maple miso cashews that pair wonderfully with the Quesco Fresco by Five Brothers.

 

 

How to Make Your Cheeseboard

Start by arranging your cheeses on your platter.  We chose four cheeses that range from mild to strong flavoured.  We went with Five Brothers white fleet queso fresco, Five Brothers avalon smoked mild cheddar, woolwich dairy-chevrai soft ripened goat cheese and finally a strong blue cheese, Caronzola semi soft surface ripened blue veined cheese.

 

Top the goats cheese with your favourite jam, we went with one with got at a craft fair, Aunt Liz’s black currant jam.  Then scatter your cashews on the board, add a few crackers to go with your goats cheese and dig in!  Be sure to start with the mild cheeses first, sampling the stronger cheeses last.

 

 

These cashews are so quick.  Five minutes to mix together and only 10-12 minutes to bake!  I’m all for easy appetizer’s and it doesn’t get much better than this.  Hope you enjoy them as much as we did!  See you all in the new year:)

 

 

Maple Miso Roasted Cashews

Sweet and salty, these cashews pair excellently with mild flavoured cheeses.

Ingredients

  • 1 1/2 tsp white miso paste
  • 2 tbsp maple syrup
  • cracked black pepper, to taste (we used 6 turns of a pepper mill)
  • 1 tbsp avocado oil, or other vegetable oil
  • 2 cups cashews, roasted and unsalted

Instructions

  1. Preheat oven to 375F.

  2. Mix first 4 ingredients in a bowl.  Pour over the cashews and mix well.  Arrange cashews in a single layer on a parchment lined pan.  Roast for 10-12 minutes, stirring halfway through.  Remove from oven and allow to cool completely.

Rosemary Garlic Roasted Cashews

Savoury roasted cashews with a herby garlic flavour that pairs excellent with smoked cheeses.

Ingredients

  • 1 tbsp +1 tsp fresh rosemary, chopped
  • 1 1/2 tsp garlic powder
  • 1 tsp maple syrup
  • 1 tbsp avocado oil, or vegetable oil of choice
  • 1/4 tsp each salt and pepper
  • 2 cups cashews, roasted unsalted

Instructions

  1. Preheat oven to 375F.  

  2. Mix the first 5 ingredients in a bowl. Pour over the cashews and mix well. Arrange in a single layer on a parchment lined pan. Bake for 10-12 minutes, stirring halfway. Remove from oven and allow to cool completely.
